IKEA. Land of the flat pack. Home of cheap furniture. World of Vegan treats? Well, it definitely was not a turn that I expected to happen. After spending hours emerged in the world of swedish words for furniture that despite how much I tried, I could never pronounce. I found my stomach rumbling, and crying for assistance. Like an angel showing the way, light shone down onto the fast food counter for IKEA and lead the way to the "Veggie Dog" - without any woof that is. After avid googling, Alistair and I deemed them safe to nibble and purchased two for... £1! Absolute bargain, and perfect for the exhausted. The sausage is a concoction of lentils and vegetables, and served on pickled cabbage and crispy onions. Now I wouldn't encourage you to visit IKEA just for the hotdogs, or the mango Oatly which they only sell there. But! It is definitely worth a nibble. To me, my happiness not only comes from the ability to eat when hungry, but the widespread movement reaching even the strangest of places. IKEA - I salute you.

I would like to preface this gorgeous curry dish with the fact that my darling fiancé decided to cook me a delicious meal ready for when I finished work. He popped it onto the stove and left to pick me up from work. As we drove back home, we laughed at the thought of him accidentally burning down the flat whilst trying to do something so thoughtful. As we laughed and laughed, headed through the front door I could hear the faint sound of my fire alarm screeching. I entered my flat to find it filled with billowing black smoke that gathered from above my stove. The curry survived, and luckily my gorgeous little kitten was stashed in the bedroom and none the wiser. After airing out the flat for what seemed like a lifetime, and coughing my entire out of my system - tea was ready. Ingredients:1 tbsp coconut oil 1 chopped onion 2 garlic cloves Ginger (we used frozen) 3 tbsp Thai red curry paste 1 tbsp smooth peanut butter 500g sweet potato (we used frozen) 400ml can coconut milk 200g bag spinach 1 lime Rice - we always use microwave packets as I destroy rice.
